Gorgonzola Dolce
Meaning “sweet” in Italian, Gorgonzola Dolce DOP is a soft, blue, buttery cheese made with pasteurized cow’s milk. The cheese took its name from a small town in Lombardy near Milan, where it said to have been born in the 12th century. It has a pale yellow, buttery and melty paste speckled with a homogeneous distribution of blue and green veins. The rind is compact, rough, hard and grey/pinkish in color but not edible. Flavors are not very assertive but sweet, mild with notes of sour cream and lactic tang. It takes a minimum of 45 days ageing to let Gorgonzola demonstrate its unique characteristics.
Pairs well with Joseph Drouhin Chardonnay or Charles Krug Merlot

This Spanish goat cheese has a gentle aroma, slight acidity, and at times a little peppery bite.

Sage Derby is a variety of British Derby cheese infused with sage to produce a glorious green marbling effect and subtle herb flavor. Hard to find these days, it is England’s oldest and most famous cheeses originally made only for special occasions such as Harvest and Christmas.
Pairs well with Justin Cabernet Sauvignon or Rombauer Chardonnay

St. Angel Triple Cream Brie
Saint Angel is a triple cream brie made with pasteurized cow’s milk. This luxurious triple-creme has a plump and pillow-like appearance with a distinctive square shape. It is covered with a fluffy, white rind with a velvety feel. Its interior pâte is rich ivory paste with the delicate taste of sweet cream and whipped butter. Its flavor is very creamy – buttery, as you would expect and with a tang the closer you get to the rind. The luscious delight is well known for its inoffensive hint of mushroom-like flavor that becomes richer with age.  Pairs well with Cakebread Sauvignon Blanc or Imagery Pinot Noir
